WHAT IS WAGYU?

Wagyu isn’t one particular cut, grade or style of beef.

It is a family of Japanese cattle breeds, shaped by centuries of history and prized for their ability to produce exceptional intramuscular fat.

The term originally refers to four native Japanese breeds:

  • Japanese Black
  • Japanese Brown
  • Japanese Shorthorn
  • Japanese Polled

Japanese Black is by far the most common and the breed most closely associated with Wagyu’s extraordinary marbling.

 

BUILT FOR THE FIELDS

For centuries, cattle in Japan were used primarily as working animals rather than raised for meat.

During long periods when eating meat was restricted by Buddhist influence, cattle were valued for their labour. They worked in fields and transported agricultural goods. 

Over generations, these animals developed the ability to store fat within the muscle.

That intramuscular fat is what we now call marbling, and it is responsible for Wagyu’s signature richness, tenderness and flavour.


WHAT DOES A5 MEAN?

Japanese Wagyu is graded according to both yield and quality.

The letter, from A to C, refers to how much usable meat the animal produces. The number, from 1 to 5, assesses qualities including marbling, colour, texture and fat quality.

A5 is the highest possible grade.

It is extraordinarily rich, with dense seams of fat running through the meat. That is why authentic Japanese A5 Wagyu is usually served in small portions rather than eaten like an ordinary steak.

WHAT ABOUT BRITISH WAGYU?

Purebred Japanese Wagyu genetics can be raised outside Japan, but the animals need to adapt to different climates, landscapes and farming systems.

In Britain, Wagyu is often crossed with established breeds such as Aberdeen Angus or Hereford. These crosses combine Wagyu’s natural capacity for marbling with the resilience of cattle well suited to British conditions and our predominantly grass-based farming system.

The result is different from Japanese A5 - its own expression of Wagyu.

 


HOW SHOULD WAGYU BE COOKED?

Very simply.

For highly marbled Japanese A5, a hot pan and a quick sear (sometimes as little as 30 seconds on each side) is often enough. Add salt, slice and serve.

The fat begins to melt almost immediately, carrying flavour through every bite.

Because it is so rich, a little goes a very long way.
