At Masons Meats, we don't follow trends. We follow truth. And the truth is this...
Animal fat isn't the enemy. It never was.
For decades, you've been told that saturated fat causes heart disease. That red meat clogs your arteries. That butter is bad and margarine is good. These beliefs shaped global health policies, corrupted food supply chains, and convinced millions to abandon the very foods that kept their ancestors strong, lean and healthy.
This narrative wasn't based on sound science. It was based on flawed research, political influence, and corporate profit.
It's time we told the real story.
1. The Origin of the Anti-Fat Lie: Ancel Keys and the Cherry-Picked Study
In the 1950s, Ancel Keys launched the Seven Countries Study - a nutrition study that would go on to shape half a century of health advice.
Keys claimed that saturated fat caused heart disease. But here’s the catch: he cherry-picked the countries.
- Of 22 countries with available data, Keys included only the 7 that supported his theory.
- Countries like France, Germany, and Switzerland, where people ate a lot of saturated fat but had low rates of heart disease, were ignored.
- He failed to account for major variables like sugar consumption, smoking, and lifestyle.
Even the Framingham Heart Study, used to support Keys’ claims, ultimately admitted: “There is no discernible relationship between dietary cholesterol and serum cholesterol.”
This wasn’t science. It was a hypothesis forced into the data. And it launched a global war on fat.
2. How the Food Industry Profited From the Lie
Once the U.S. adopted Keys’ narrative, the 1980 Dietary Guidelines recommended cutting saturated fat and cholesterol.
The food industry saw an opportunity and took it.
- Animal fats like butter, lard, and tallow were demonised.
- In came seed oils: cheap, industrially processed, chemically stable oils like soy, corn, and canola.
- To make low-fat food taste good, companies added sugar, starch, and artificial flavourings.
- These were packaged as “heart-healthy” and sold by the billions.
Meanwhile, the real result?
Obesity, diabetes, heart disease, and metabolic illness skyrocketed.
“The low-fat craze inadvertently led to higher sugar and refined carbohydrate intake, worsening public health.” — Lustig et al., JAMA, 2015
3. The Real Science is On Our Side
At Mason’s Meats, we base everything we do on ancestral wisdom, transparency, and science. And modern evidence has completely dismantled the myth that saturated fat is harmful.
- Siri-Tarino et al., AJCN (2010): “No significant evidence that saturated fat is associated with increased risk of coronary heart disease.”
- PURE Study, The Lancet (2017): “Higher saturated fat intake was associated with lower stroke risk and no link to CHD.”
- JACC Review (2020): “No robust evidence that reducing saturated fat lowers the risk of cardiovascular disease.”
- Harvard T.H. Chan School of Public Health: “Most studies fail to show a strong association between dietary cholesterol and heart disease.”
The science was always there. It was just buried beneath decades of bad policy.
4. So What’s Really Making Us Sick?
Let’s be clear: It’s not the grass-fed fat in our jerky.
It’s not the steak. It’s not the butter.
It’s the seed oils, the refined sugar, the ultra-processed garbage marketed as healthy.
- Seed oils like soy, corn, and canola are rich in unstable omega-6 fats that oxidize easily and cause inflammation.
- Refined carbs and sugars fuel insulin resistance, obesity, and chronic illness.
- Ultra-processed foods - low in nutrients, high in additives - now make up over 60% of modern diets.
At Mason’s Meats, we don’t touch that rubbish. Our jerky is made with just two ingredients: grass-fed beef and salt. That’s it.
No preservatives. No seed oils. No sugar. No compromise.
5. Reclaiming Fat, Reclaiming Health
We don’t just sell beef jerky. We’re reclaiming the truth.
Animal fat:
- Builds hormones
- Fuels brain power
- Supports cellular function
- Promotes resilience and strength
Our ancestors thrived on it. Indigenous communities relied on it. And so do we.
At Mason’s Meats, we believe real food builds real people. The further we drift from nature, the sicker we become.
That’s why we’re putting fat back where it belongs: in your food, your body, and your future.
6. Final Word: Ditch the Dogma, Trust Your Instincts
The anti-fat agenda was never about your health. It was about profit, control, and convenience.
Now, we know better. We eat better. We live better.
So next time you hear someone say fat is bad, show them the science, or just hand them a pack of Mason’s Meats jerky and let their body remember what real food tastes like.
Fat isn’t the enemy. It’s survival.
